It has an excellent ability to absorb condiments and best expresses its characteristics in creamy and tasty risottos. In recent years, it has become increasingly popular for the preparation of excellent arancini (rice balls), but it has always competed admirably in the preparation of the typical local dish: the famous Panissa of Vercelli. DESCRIPTION:

The S. Andrea PDO rice is one of the most representative and flagship rice varieties of Baraggia Biellese and Vercellese. It was introduced in 1974 as a selection of an older variety, the Rizzotto. Baraggia is a piedmont area between the provinces of Vercelli and Biella: a precious territory that extends from the Monte Rosa Pre-Alps towards the plain and is crossed by the Cervo and Elvo streams. The climate and the clay composition of the soil provide a unique vegetable habitat, hence 'Baraggia beans' have distinctive organoleptic characteristics from which the pleasant texture when cooked derives.
