The Riso Violet is a new, native and aromatic variety of rice belonging to the black rice family. The grain and the whole plant are naturally violet in colour. Walking before harvesting on the bank of the paddy fields where Violet grows, one can already foretaste the pleasant aroma that will be fully released during cooking. The grains remain intact and shelled, absorbing flavours and seasonings while retaining their natural fragrance. Being wholemeal, it provides a higher nutritional intake than white rice, is more digestible and suitable for a healthy, balanced diet. In addition to its content of vitamins and minerals, this particular variety has a high level of anthocyanins, which not only give it its natural colouring, but also perform a strong antioxidant function.
